spicy mayonnaise
You will need: 500 ml vegetable oil, juice from 1/2 lemon, 2 raw egg yolks, 1 tsp. Dijon mustard, 1-2 tbsp. white vinegar, dried chili (ground), salt to taste.
How to cook. Whisk the yolks in a bowl, add the mustard. While continuing to beat, gradually add the oil in a thin stream until the mixture thickens. On half of the added oil, pour in a spoonful of vinegar. Add salt, lemon juice and ground chili, if necessary, another tablespoon of vinegar, beat a little more.
Caesar sauce
You will need: 6 pcs. anchovy fillet in oil, 2 yolks, 1 garlic clove, 125 ml vegetable oil, 2 tbsp. l. olive oil, 2 tbsp. lemon juice, 1 tsp Dijon mustard, 30 g parmesan, pepper and salt to taste.
How to cook. Finely chop the anchovies and garlic, mix into a pulp. Add egg yolks, lemon juice and mustard to it. Start whipping the resulting mass, literally drop by drop adding olive oil, and then vegetable. Whisk until sauce thickens. Add Parmesan, salt and pepper. The sauce will keep in the refrigerator for a day.Barbecue sauce
You will need: 200 g ketchup, 2 tbsp. brown sugar, 2 tbsp. Worcestershire sauce, 2 tbsp. apple cider vinegar, 1 tbsp. liquid honey, 1 tsp liquid smoke, 1 tsp. sweet mustard, a pinch of ground black pepper, dried onions, garlic and celery, smoked paprika.
How to cook. The beauty of this sauce is its ease of preparation. Just mix all the ingredients in a saucepan and cook for 10-15 minutes until thickened.
