Probably hard to find a kid who would not love fries. And, at times, even mothers who adhere to the rules of a healthy lifestyle, give up the slack and allow their child a little bit harmful treats. We suggest that you replace the purchase of fast food homemade potato croquettes, as do mothers in Denmark. They sure will please your kids and will be a real decoration of the table, when you come to visit.
Most often, the croquettes are prepared in oil, although it can be baked in the oven. We offer master the basic recipe. In the future you will be able to supplement it with spices to your liking, as well as to prepare croquettes stuffed: cheese, bacon, and mushrooms.
INGREDIENTS
• Potatoes (it is important that it be varieties that do not boil soft) - 1 kg.
• Eggs - 4 pcs.
• Flour - 1 tbsp.
• Breadcrumbs - 1 tbsp.
• Nutmeg - to taste
• Salt - to taste
• Vegetable oil (frying) - 2 liters.
PREPARATION Step by step
1. Boil potatoes "in uniform". If the potato has turned watery, slightly dried for it in the oven at 180 degrees - it should be quite dry.
2. Peeled potatoes pressed through a special press or rub on a medium grater.
3. Season with salt, add the nutmeg and three egg yolks, knead the dough uniform.
4. Refill dough into a piping bag with a nozzle diameter of about 2 cm. Such a bag can be manufactured independently, wearing tight plastic bag (or pastry bag) truncated at the neck of a plastic bottle. Potato croquettes planted 4-5 cm in length on a lightly floured surface and gently cut off with a knife. You can roll the croquettes hands, but then they do not get such rovnenko and neat. Around the same time on their preparation will need much more.
5. Mix another egg with the remaining three egg whites. Collapses sausages in flour, "bathe" in the egg mixture, and then put in breadcrumbs. Make sure that the crumbs evenly distributed over the potato sausages, including its ends.
6. Put the potato croquettes in a preheated 170-180 degree vegetable oil for 3-5 minutes, until they are golden brown.
7. We take out the laid croquettes on a plate with a paper towel to them with glass excess oil. Serve hot as a side dish or a separate dish with a variety of sauces. Bon Appetit!
