Ingredients:

  • Butter - 50 g
  • Cookies - 100 g
  • Cinnamon - 1 tsp
  • Cherries - 225 g
  • Cottage cheese - 450 g
  • Sugar - 100 g
  • Water - 150 ml
  • Gelatin - 30 g
  • Cream 20% - 120 g

Cooking method:

  1. Grind the cookies into crumbs.
  2.  Add cinnamon and combine with previously melted butter.
  3. Stir until smooth.
  4. Line the bottom of the split baking dish with parchment.
  5.  Put the cookie and butter crumbs into it and tamp well, forming the bottom cake.
  6.  Cover the cherries with sugar.
  7.  Cover with water and cook for 5-7 minutes.
  8. Pour gelatin with water and leave to swell.
  9. Melt the swollen gelatin in a water bath, without boiling.
  10. Mix curd with cream and beat with a blender.
  11. Add the remaining sugar and continue whisking until the curd is smooth.

  13. In a blender, beat the cherry and syrup.
  14. Add half of the gelatin to the cherry mass, and the rest to the curd. Stir.
  15. Put the curd mass on a sand base and let it harden slightly in the freezer.
  16. Pour the cherry mass over the top.
  17.  Place the cake in the refrigerator until it solidifies.

Advice

In order to remove the cake from the mold, you need to place it in very hot water for a couple of seconds. If using a split mold, put it in water in a plastic bag, otherwise water may seep into the mold.
