Everybody does it - and in vain.
1. Store near the stove
Olive oil (and any other) does not like heat. Store it in a cool, dark place - just not in the refrigerator.
And with constant heating near the stove, the oil begins to emit harmful substances, its taste quickly deteriorates.
2. Use only unrefined oil
Yes, the less the oil has been processed, the more useful it is. But you cannot fry in unrefined olive oil - otherwise, dangerous carcinogens will appear in your dish. Olive oil has four refinement categories, each with its own application.
Thus, unrefined extra virgin oil should only be used for salads, sauces and other cold dishes.
3. Store in a clear bottle
It's not for nothing that olive oil is sold in a darkened container - it doesn't like light and oxygen. Therefore, the worst option for storing oil at home is to pour it into a transparent jug.
Keep the bottle dark and tightly closed, so your oil is more likely to retain its beneficial properties.4. Buy oil in a plastic bottle
Usually inexpensive oil is sold with plastic. And it seems that such a purchase is very profitable. However, all self-respecting manufacturers produce olive oil in dark glass bottles, but transparent and plastic ones are a reason to doubt the quality of the product.
In addition, oil tends to absorb harmful substances from plastic.
5. Use one bottle for years
Olive oil is quite expensive, so many people prefer to "stretch the pleasure": they use it only on holidays, from time to time. As a result, the opened bottle is not consumed for years.
But if you have already opened it, you need to use olive oil within a month.
It cannot be stored for a long time, otherwise it will completely lose its taste. But in a closed container, subject to storage conditions, the oil will not deteriorate even in 2 years.
