Previously, for the holidays, we always ordered a cake at a local cafe, but after I tried cook "Mink Mole" just once, this delicacy has become an excellent alternative to sweets from cafeterias! Try to do it yourself, and you will also be amazed at the taste and beauty of this masterpiece!

Mink Mole cake recipe

It will be needed for the test:

  • wheat flour - 140 grams;
  • eggs - 3 pieces;
  • sugar - 140 grams;
  • milk - 3 tablespoons;
  • cocoa - 1 tablespoon;
  • baking powder - 1⁄2 teaspoon;
  • cognac - 1 tablespoon.

It will be needed for the filling:

  • cottage cheese - 350 grams;
  • cream - 250 grams;
  • bananas - 5 pieces;
  • gelatin - 15 grams;
  • water - 80 milliliters;
  • sugar - 3 tablespoons.

Preparation:

As you already understood, our biscuit will be chocolate. For me, in general, the best delicacy in the world is chocolate, and everything connected with it! Let's start with making a chocolate sponge cake. Immediately put the oven to heat up to 180 degrees. Sift flour, cocoa and baking powder into a separate container.

Separate the whites from the yolks. Beat the yolks with a mixer with sugar until the mass is whitened. Add a little warmed milk, whisking the mixture. Then add the cocoa flour and baking powder in small portions.

In a separate container, beat the whites until frothy. And after that, you can combine the protein and yolk mass. Now the components need to be mixed gently with a wooden spoon in a circular motion. You will get a batter filled with bubbles.

It is best to use a removable pan for baking this cake. Put baking paper in it, you can grease the walls with oil, but not necessary. Pour the dough into the mold, and send to the already preheated oven for 40 minutes. Check readiness with a toothpick. Next, the biscuit must be removed from the oven and allowed to cool right in the form. Let it stand for an hour and a half.

At this time, you can prepare the filling. First, cover the gelatin with water and set aside to swell. After that, place it in a water bath, and, stirring constantly, and not allowing it to boil, bring the gelatin to complete dissolution.

Place 1 chopped banana, sugar and cottage cheese in a blender. Whisk the food until smooth.

Whisk the cream separately using a mixer at maximum speed. It is not necessary for the mass to become fluffy, it is enough for bubbles to appear. Gently add the gelatin solution to the cream in a thin stream, continuing to beat the mass. Also add the banana curd mass, and beat the mixture until smooth. You will end up with a liquid mass that must be refrigerated for one hour.

Remove the cooled biscuit from the mold and place on a plate. Using a small spoon, take out the middle of the cake in a circle. The thickness of the bottom and sides should be about a centimeter. Combine cognac with a spoonful of water, and saturate the whole biscuit with this liquid.

Thoroughly coat the bottom with the curd filling. Peel the rest of the bananas and place them inside, either whole or in halves. On top, there is again a curd filling in the shape of a dome. Sprinkle the crumbs over the cake. The cake must be gently pressed with your hands to give it an even shape, and then sent to the refrigerator overnight so that it is thoroughly saturated. Cook and you will definitely not regret it!
