I offer you two options for making a bird's milk cake - dietary and without baking.
Bird milk diet cake
- soft cottage cheese - 2 tbsp. l .;
- milk - 270 ml;
- eggs - 3 pcs. + 3 squirrels;
- citric acid - ¾ tsp l .;
- gelatin - 2.5 tbsp. l .;
- corn starch - 2 tbsp. l .;
- orange juice - 0.5 tbsp l .;
- cottage cheese - 200 g;
- cocoa - 4 tsp l .;
- lemon juice - 0.5 tbsp. l .;
Whisk 3 egg whites until crisp. Separately, you need to combine 3 yolks, soft cottage cheese, vanillin, baking powder, starch, sweetener, citrus juices. After that, carefully add the proteins to the mass, and mix. You can add citrus juice and sugar substitute to taste.
Pour the dough into a round shape and bake for 12 minutes in an oven preheated to 180 degrees. After that, the biscuit must be left in the form to cool.
Now you can do soufflé. To do this, combine 125 ml of milk and some of the gelatin, leaving it to swell. Whisk 3 proteins until peaks, then add citric acid and mix gently. Put the swollen gelatin on fire and leave to dissolve, just do not boil, the fire should be slow. Combine regular cottage cheese with vanilla and sweetener, and then add the cooled gelatin. Beat the mass until smooth so that all the grains of cottage cheese break, you can beat with a mixer or blender. Cool the curd mass, and then beat it with a mixer so that it doubles in size, and many small bubbles appear. Put the finished soufflé on a sponge cake in the form, and put in the refrigerator for 40 minutes.
Connect 3 tbsp. l. milk and 2 tsp. l. gelatin. Separately combine cocoa, sweetener and 125 ml of milk, put the mixture on fire, boil, and then leave to cool. Put the gelatin on fire, dissolve, and add cocoa, stir, let cool. After that, put the chocolate icing on top of the soufflé, and remove the cake to set in the refrigerator.
No baking bird milk cake
- milk - 0.5 l;
- gelatin - 50 g;
- cocoa - 3 tbsp. l .;
- sour cream - 1 l;
- sugar - 1 tbsp.
A recipe for those who are not afraid for their figure, but do not like to bother with baking for a long time. It turns out the cake is not worse than the standard one! To begin with, absolutely all products must be removed from the refrigerator so that they warm up to room temperature. Combine gelatin with 100 ml of milk, and set aside, let it swell.
Combine half of the sour cream and half of the sugar, whisk until thick. Next, you need to add cocoa and 200 ml of milk to the mass, and beat everything well again.
Put the gelatin on the fire, wait until it dissolves, and then add it to your mass in a cooled form. Whisk until smooth.
Mix the remaining ingredients separately, without the cocoa. At this time, pour the chocolate mass into a round shape, cover it with a foil, and put it in the refrigerator for half an hour.
Next, pour the light mass on top of the chocolate layer, and send the cake to the refrigerator for another half hour. You can put some fruits or berries between the layers of the cake. It turns out very tasty!
