First of all, you need to chop the herbs very finely. She will give our dish an unrivaled flavor. I use onion and dill. You can take other herbs as well: parsley, oregano, mint, and so on.

Now we take the scales and weigh a pound of flour. It must be sifted into a deep bowl. We sift not in order to remove garbage from flour (this is not required for a long time, now manufacturers care about the quality of the product and all the flour goes well), and in order to saturate it oxygen. This will add airiness to the future dish.

Add chopped greens and one teaspoon of salt to the sifted flour. Stir well to distribute the salt and slices evenly over the flour.

Now you need to pour in about 300 ml of boiled water with a temperature of about 40050 degrees.

We knead the usual dough. After our dough is kneaded and easily collected into a ball, knead for another 7-10 minutes.

The result is a very soft dough. Put it on a board and cover with a towel. We forget about the test for 10-5 minutes.

After that, we take our bun and make a sausage out of it, which we divide with a knife into several equal parts. The pieces do not need to be made large. From each piece we form an oval like a pie.

Pour vegetable oil into a bowl (odorless, since we don't need the aroma of seeds now). Using a culinary brush, grease our blanks with oil from all sides. Now we cover them with foil and leave to rest for half an hour.

We take a little flour (a couple of tablespoons, salt it. Cut the onions very finely. Combine salted flour and onions in a plate. Take a bowl deeper, because now you need to pour the mixture with boiling vegetable oil. Stir continuously with a spoon. This will be the crunchy layer of our cake.

The working surface must be lubricated with the same vegetable oil. Now we take a pie-shaped blank and begin to stretch it almost to transparency. We pull not in a circle, but with such a long and thin cake. Put the onion filling in the middle, which will give the crunch.

We fold the dough and close the layer. you need to try to roll up like a snail. All blanks must be covered with cling film. They dry out very quickly.

We take the snails and roll them out with a rolling pin to the size of a regular cake that fits in a frying pan.

The pan needs to be warmed up. You can not lubricate with oil, it is enough for cakes. Cook over medium heat until appetizing brown. I have 3-4 cakes in one frying pan.

I like to flip twice more. That is, after frying one side, turn it over to the other and fry it. Then we do not remove the cake from the fire, but turn it over and fry it again. Thus, we achieve the appearance of a characteristic crunch and get rid of undercooked areas. well, and the crust becomes much more attractive.
