Soup "Lohikeytto" - cook fish soup in a new way

I am a great lover of fish: I cook it often, trying a variety of recipes. And now I looked in a cookbook and found an interesting soup with a strange name "Lohikeytto". This Finnish fish soup, characterized density, tenderness and satiety. Well, try to make this unusual first course.

Ingredients

  • red fish - 300 grams;
  • potatoes - 3 pcs .;
  • Onions - 1 pc .;
  • water - 1 liter;
  • cream (10%) - 200 ml;
  • flour - 1 tbsp. l .;
  • butter - 30 g;
  • dill - 30 g;
  • salt - to taste.

Cooking method

1️⃣ To prepare the soup, I use all the parts of the fish. Broth boil on fish remnants, which include the head of the bone and abdomen.

Fill the fish with water, add the bell pepper, onion (optional) and set to cook for 30 minutes. Here you can add the fish fillets. Many prefer to add the fish to the already cooked vegetables, but I usually make out the fillet, to prevent ingress of seed.

2️⃣ While preparing broth, diced onion and fry in butter. I fry the onion directly into the pan in which to cook and will continue to fish soup.

3️⃣ Strained broth pour in to the onions, and the fish is cut, separating the fillet from the bone.

4️⃣ Peeled potatoes cut and send in the broth. Put the pan on the fire and wait 5 minutes after boiling.

5️⃣ Mix cream and flour, and then pouring a thin stream into the boiling soup, stirring constantly.

With regard to cream, I took 10%, but more appropriate to be 20% - in this case, the soup is a more intense and satisfying.

After addition 6️⃣ creamy mixture reduce the heat to a minimum and tomim soup about 10 minutes.

7️⃣ salt and pepper to taste, bringing a dish to a perfect taste. Add the chopped herbs.

That's all - our Finnish fish soup is ready. Disassemble the fish fillets can be added in the soup itself, and make it an element of decoration options.
