New Year's holidays are ahead, and many have already begun to think over the menu for the festive table. In addition to our favorite Olivier salad, herring under a fur coat and vinaigrette, I would like to surprise loved ones with something delicious and unusual. What if you make a delicious cake? Would you say that cakes are only relevant for birthdays? Well then let it be a savory cake that you can use as a snack! I offer you two simple recipes for making incredibly delicious, juicy and delicious liver cakes!
Even my kids, who hate liver and never eat it, despite my persuasion, gobble up such cakes on both cheeks!
Liver cake in the oven
You will need:
- liver (absolutely any) - 500 grams;
- lard - 100 grams;
- eggs - 3 pieces;
- onion - 1 head;
- carrot - 1 piece;
- potatoes - 2 tubers;
- vegetable oil;
- semolina - 3 tablespoons;
- starch - 1 tablespoon;
- salt, seasonings, pepper - all to taste.
Preparation:
First you need to thoroughly rinse the liver, remove the films. You also need to rinse the fat. Next, scroll these components in a meat grinder. Pour in the starch, semolina, stir the mixture well and refrigerate for 30 minutes.
Chop the onion and grate the carrots. Fry them together in oil.
Grate the potatoes on the finest grater. Boil eggs, peel, and cut into small cubes.
Now you can get the minced liver from the refrigerator, add eggs, potatoes, fried onions and carrots, pepper, salt, your favorite spices to it. Stir everything well.
Coat a removable baking dish with oil and place the minced meat in it. Bake the cake in the oven at 180 degrees for 40 minutes.
Puff liver cake in a pan
You will need:
- chicken liver - half a kilo;
- eggs - 2 pieces;
- flour - 2 tablespoons;
- carrots - 2 large;
- onions - 2 pieces;
- mayonnaise - 3-4 tablespoons;
- vegetable oil;
- salt.

And this cake contains fewer ingredients, but you have to mess with it a little. I promise you that your work will be justified! So, first, finely chop the onion, and grate the carrots. Send vegetables to fry in a skillet with oil.
Rinse the chicken liver thoroughly, remove the films and, if available, remove the green "things" - this is the bile duct and its ducts. Do not remove the bile ducts - the dish will be spoiled, because it will start to taste bitter. Now you can scroll the liver in a meat grinder. Add a couple of eggs to the mass, mix, add flour and salt. Knead the minced meat until smooth. If desired, you can add a little more flour if your minced meat is too liquid.
Put the fried onions and carrots in a bowl, add mayonnaise and stir. Preheat a frying pan, grease it with oil, and put about 4-5 tablespoons of minced liver on it, smooth around the entire perimeter. Look at the diameter of your pan. It is better to take a small one, and the amount of liver mass should not be too thick. We are baking a biscuit. First on one side, then on the other. Put the finished cake on a plate. Now it's the turn of the next cake, etc.
While the second crust is baking, brush the first with a mixture of mayonnaise and stir-fried vegetables. Next, the second cake is on top, and grease again, etc. It turned out to be a cake, but before you eat it, send it to the refrigerator for an hour.
