French Tart Taten

One of the symbols of French cuisine, the famous “inverted” pie can be made quickly and easily at home. To do this, you only need 5 ingredients that are found in any kitchen. True, with the dough and filling you will have to mess up a little, but believe me, it's worth it. Caramelized apples and a delicate, crumbly texture will give the dessert an unforgettable taste that your homemakers will definitely appreciate.

Ingredients:

  • 7 tbsp. l. flour
  • 130 g frozen butter
  • 2 tbsp. l. Sahara
  • 2 yolks
  • 0.5 tsp l. baking powder
  • a pinch of salt
  • 4-5 medium sized apples
  • 7 tbsp. l. Sahara
  • vanillin or vanilla sugar to taste

Cooking method:

Sift flour into a deep bowl, add salt and baking powder there. Grate the frozen butter on a fine grater (to make it more convenient, you can periodically dip the bar in flour). In a separate container, mix the yolks and sugar, combine the mixture with the dry part of the dough and butter crumbs. Knead the dough thoroughly (it should be quite tight) and roll it into a circle (22-24 cm in diameter). Wrap the blank in parchment and refrigerate for half an hour.

At this time, start preparing the filling. Melt the sugar over medium heat in a heavy skillet and bring it to a dark caramel. Add vanillin there. Pour the caramel over the parchment and leave to cool. Wash the apples, peel and cut into thick slices (each apple into 6-8 parts). Break the frozen caramel into pieces to a state of fine crumbs.

Cover the baking dish with parchment, pour half of the caramel chips in the first layer. Flatten and spread the apple slices on top of it. Sprinkle the other half of the crumbs on top and cover with the dough from the refrigerator. Bake Tart Taten in an oven preheated to 180 degrees for 30-35 minutes. Remove the pie from the oven and turn the filling upside down on a plate while hot.

Greek pie Mylopita

photo from open sources

Translated from Greek "mylopita" literally means "apple pie". Therefore, there is no authentic recipe for this dessert. Mylopita in Greece can be prepared based on biscuit, shortcrust or yeast dough. However, the Greeks consider the most exquisite version of mylopita to be a pie made from the thinnest puff pastry filo. It is rolled into sheets 1 mm thick and filled with apple filling. In this case, the dessert is more like strudel or oriental baklava. The taste is unforgettable, and the hassle of cooking (if you buy a dough in the store in advance) is no more than 15-20 minutes

Ingredients:

  • 10 sheets of filo dough
  • 5-6 medium sized apples and - 1 kg
  • a pinch of cinnamon and nutmeg
  • 3-4 tbsp. l. sugar (preferably brown) - 2-4 tbsp. l.
  • 100-150 g of nuts (walnuts, hazelnuts, almonds)
  • 120 g butter - 100-120 g
  •  4 tbsp. l. honey - 3-4 tbsp. l.
  • juice of half a lemon

Cooking method:

Wash the apples, peel and cut into small cubes. Drizzle with lemon juice to prevent darkening. Finely grind the nuts, mix them with the apples. Add sugar, nutmeg and cinnamon to the filling and stir.

Defrost as many filo dough sheets as needed at room temperature. Preferably in a package or (if the package is large) in a plastic bag so that the dough does not dry out. Melt the butter, grease the bottom of the baking dish and place two sheets in there. Spread with butter, spread the apple and nut filling on top, cover with two more sheets of dough. Repeat the process until the dough and filling are finished. The top layer should be dough. Top it with the remaining butter. Using a sharp knife, cut the pie directly in the form into portioned squares and send to the oven, preheated to 180 degrees, for 20-25 minutes.

Melt honey until liquid, add a little water (2-3 tbsp) and lemon juice there. Remove the finished cake from the oven and pour over the honey dressing.

Hungarian Bulk Pie

The uniqueness of this recipe lies in the fact that the dough consists only of dry ingredients. Accordingly, you do not need to knead it - you simply "pour" all the ingredients of the pie into one container. A separate plus is that the ingredients are as available as possible, and most likely, you already have them in your kitchen. So you don't even have to go to the store first. Another secret of the recipe lies in the second name of the cake: it is called "three-glass cake". So keeping the proportions during cooking will not be difficult.

Ingredients:

  • 1 tbsp. flour
  • 1 tbsp. Sahara
  • 1 tbsp. semolina
  • 120 g butter
  • pinch of cinnamon
  • 7 medium apples

Cooking method:

Combine all dry ingredients (flour, semolina, sugar, baking powder and cinnamon) in a deep bowl. Wash the apples, peel and grate on a coarse grater. Place baking parchment on the bottom of a baking dish and brush with butter. Sprinkle a third of the dry ingredients mixture on top and smooth. Then place half of the grated apples on this layer. Pour the third dry mixture again, tear the layer apart. Add the remaining apples and sprinkle with the last part of the dry mixture. On the top layer, grate butter (for convenience, put it in the freezer beforehand). Send the cake to the oven and bake for 45 minutes at 180 degrees.
