Eggplant recipe that is indistinguishable from mushrooms
You will need: 2 kg of young eggplants (if old, then seedless), 1 head of garlic, 150 ml of vinegar 9%, 2.5 liters of water, 4 tbsp. salt, 300 ml of vegetable oil, 100 g of dill.
How to cook:
Wash the eggplants, remove the skin, remove the tails, cut into large cubes.
Bring the water to a boil, season with salt, add eggplant and vinegar, bring to a boil again and cook for 5 minutes.Put the eggplants in a colander and cool.
Chop the garlic and dill, add the eggplant, season with vegetable oil. Arrange in the crystallized glass jars, tamping tightly, close with a tight lid and send to the refrigerator for 24 hours.
