Summer menu for August: recipes for delicious dishes at the end of summer

In August - the high season of vegetables, and we will focus on them.

For those who did not have time to "lose weight in the summer", there is an excellent opportunity to correct figure and health by autumn - with the help of a light vegetable diet from seasonal products.

Here are some simple and delicious late summer dishes.

Ratatouille

You will need: 6 tomatoes, 2 sweet bell peppers, 2 zucchini, 2 eggplants, 3 tbsp. tomato paste, 2 tbsp. vegetable oil, salt, pepper and seasonings to taste.

How to cook: Wash 2 tomatoes and 2 peppers and cut into small pieces. Fry them in a pan for 2-3 minutes, add tomato paste and 3 tbsp. water. Season with pepper and simmer for 10 minutes.

Zucchini, eggplant, the remaining tomatoes, cut into slices. Take a baking dish, pour vegetables stewed with tomato paste into it, alternate on top with vegetables cut into circles. Salt the dish, add seasonings.

Cover the baking dish with cling film and send to the oven preheated to 150-180 degrees for 15-20 minutes.

Zucchini puree soup

You will need: 1 large zucchini, 1 liter of vegetable broth, 2 cloves of garlic, 1 processed cheese, 3 tbsp. bread crumbs, 2 tablespoons finely chopped dill.

How to cook: peel the zucchini, remove the seeds. Cut it into small pieces, put in a saucepan, cover with broth, add chopped garlic and cook. When the water boils, add the melted cheese and bread crumbs, cut into pieces, salt and pepper.

Cook until the melted cheese is dissolved. If the zucchini is not young, then cook for another 10 minutes. Then transfer the soup to a blender and beat until smooth, sprinkle with dill before serving.

Stuffed tomatoes

You will need: 4 medium tomatoes, 4 eggs, 50 g cheese, salt, pepper and spices to taste.

How to cook: Wash the tomatoes, dry them, cut off the "lid" from above. Take out the pulp with a spoon, beat a raw egg into each tomato, stir the yolk. Season with salt and pepper, sprinkle with cheese.

Place the tomatoes on a plate and microwave for 2-5 minutes, sprinkle with chopped herbs before serving.

Apple strudel

You will need: yeast dough, 6 apples, 6 tbsp sugar, 1 tsp. cinnamon, 2 eggs.

How to cook: peel and core the apples, cut into slices, cover with cinnamon and sugar.

Roll out the dough into several small rectangles. Place the apples, sugar and cinnamon on them so that the edges remain free. Twist the rolls and pinch the edges.

Grease each roll on top with egg white or butter. Cover them with a towel and set them in a warm place for 1 hour.

Then preheat the oven to 200 degrees, place the strudels on a baking sheet, bake for about 25 minutes until a beautiful golden brown. It is important not to open the oven door all the time the strudels are being cooked there so that the dough does not fall off.
