This is an original and very tasty appetizer, which disperses with a bang at any table.
We invite you to diversify your summer menuby making eggplant rolls according to three simple recipes.
Spicy chili rolls
You will need: 2 eggplants, 1 chilli pod, 1 bunch of mint, 300 g feta or feta cheese, 1 lemon.
How to cook: cut each eggplant lengthwise into thin slices, brush on both sides with olive oil. Fry in a pan for about 2 minutes. Place the fried eggplant slices on a plate.
Chop the chili pepper, mix with lemon juice and chopped mint. Pepper, add cheese. Mix everything well. Put the filling on top of the eggplant, twist the rolls and secure them with a toothpick.
Bell pepper rolls
You will need: 2 eggplants, 1 ptschok of parsley, 1 large bell pepper, 4 tablespoons of sour cream or mayonnaise, salt, oil.
How to cook: cut each eggplant lengthwise into thin plates, salt, fry, let cool on a plate. Finely chop the parsley and mix with mayonnaise or sour cream. Place the mixture on one side of the eggplant.Cut the pepper into long slices, put them across the eggplant, roll the rolls. The pepper will peek out on the sides - it should be so. For spice, you can add black pepper and crushed garlic to the maonnaise.
Rolls with walnuts
You will need: 5 eggplants, 5 tomatoes, 1 bunch of cilantro, 3 cloves of garlic, 10 walnuts, mayonnaise, salt, pepper to taste.
How to cook: Slice the eggplants lengthwise into plates. Season them with salt and fry for a couple of minutes in a skillet. Pour boiling water over the tomatoes and remove the skins, then cut into thin circles.
Thoroughly chop cilantro and garlic, mix with mayonnaise, chop nuts. Coat the eggplants with mayonnaise mixture and sprinkle with nuts on top, put 1 circles of tomato on each eggplant slice. Then roll up the rolls and secure them with toothpicks.
