Caramelized carrots

You will need: 800g carrots, 2 tablespoons honey, 2 tbsp. vegetable oil, salt, pepper to taste.

You will need: 1 cup vanilla yogurt, 1/2 cup milk, 1/4 cup grated carrots, 1/4 cup walnuts, 1/4 cup raisins, 2 tablespoons maple syrup, 2 tablespoons chia seeds, 1/4 tsp cinnamon, 1/4 tsp nutmeg walnut.

How to cook: Mix all the ingredients except nuts and raisins, divide into glasses and leave in the refrigerator overnight. Garnish with nuts and raisins when serving.

Carrots with chickpeas and feta

You will need: 500 g carrots, 400 g boiled chickpeas, 200 g feta, 100 g pistachios, 2 handfuls of spinach, 5 sprigs of mint, 2 tsp. ground cumin, 1/2 lemon juice, 1 tbsp. honey, 2 tbsp. olive oil.

How to cook: cut the carrots into small pieces. Put on a baking sheet, pour with olive oil, salt and pepper. Put in an oven preheated to 200 degrees for 40 minutes, then put the carrots in a bowl.

Add chickpeas there, season with lemon juice, honey and butter, mix well. When the mixture has cooled, add coarsely chopped mint and spinach leaves, chopped pistachios, and feta pieces.
