How to make dried fruit uzvar for Christmas: 3 recipes

Everyone knows that uzvar is incredibly useful, contains a lot of vitamins and is very tasty. But does everyone know how to cook it correctly?

Uzvar made from dried apples and pears

Ingredients:

  • 2 liters of water;
  • 200 g dried apples;
  • 300 g dried pears;
  • 200 g of prunes;
  • 100 g raisins;
  • 200 g of honey.

Cooking method:

Pour dried fruits for 10 minutes with cold water, then rinse.
Boil 2 liters of water in a saucepan, put pears in it and cook for 20 minutes.
Then add apples, prunes and raisins. Cook for 15 minutes.
Add honey, bring to a boil and remove from heat. Cover and leave to cool. Strain. You can add less honey - be guided by your taste.

Uzvar with lemon zest

Ingredients:

  • 250 g of dried fruits (dried apples, dried apricots, prunes, raisins, cranberries);
  • Lemon zest to taste;
  • 1 liter of water;
  • Honey to taste.

Cooking method:

Rinse dried fruits thoroughly, add water and let it brew for about 3-4 hours.
Then pour the water into a saucepan, bring to a boil. Transfer the fruits to a jar, pour boiling water over them, add the zest, close the lid, wrap with a towel and leave in this way overnight.

Pour the uzvar before serving, and serve the fruits separately in a bowl. Serve with honey.

Christmas uzvar with spices

Ingredients:

  • 20 pcs. dried apricots;
  • 2 tbsp. l. topped with raisins;
  • 4-6 prunes;
  • 1 star anise star;
  • 1-2 hours l. cinnamon or a piece of cinnamon sticks 1.5-2 cm long;
  • 2 capsules of cardamom;
  • 1 tbsp. l. hibiscus (or 100 g of dry red wine - cabernet);
  • 5-6 carnation buds;
  • 10-12 st. l. sugar (top);
  • 0.5 tsp l. citric acid;
  • 1.25 liters of water.

Cooking method:

Pour cold water into a saucepan and add all dry spices there, boil and let it boil for 10 minutes after boiling, skimming off the foam if necessary.
Dip the soaked and thoroughly washed dried fruits into the prepared boiling water. Let them boil for at least 10-12 minutes.
Pour sugar, citric acid into the compote, correct the taste of the liquid (adding sugar or acid to taste) and let it boil for another 5-6 minutes.
Check the readiness of the fruit and, depending on this, either let it boil for another 3-4 minutes, or stop heating, pour in dry wine, close the lid, let it brew until it cools completely. Serve the uzvar cold.
