Ingredients:

  • Duck - 1 carcass;
  • Honey - 1 tbsp;
  • Sour apples - 1 kg;
  • Salt to taste;
  • Mustard - 1 tbsp;
  • Black pepper - to taste;
  • Olive oil to taste;
  • Water - 1 glass

Cooking method:

  1. Wash the duck thoroughly and dry it with a paper towel.
  2. Grate the carcass well with ground pepper, salt and olive oil (outside and inside).
  3. Cut the skin on the duck breast into a diagonal grid.
  4. Wash the apples, cut into quarters, place inside the duck.
  5. Take two wooden skewers and crosswise secure the free ends of the carcass cut.
  6. Take a baking sheet, place the duck breast-side up in the center and pour about 1 cm of water.
  7. Send the duck to the oven preheated to 180 ºС. After about 40 minutes, when the duck begins to brown on top, open the oven and pour the fat that has released into the water. If the water has boiled away, add more. The duck must be constantly in the liquid. The more often you water the duck, the juicier it will be.

  8. About 10 minutes before the poultry is ready, mix the mustard with honey, grease the carcass and send back to the oven for another 10 minutes.
  9. Let the finished duck stand for 20 minutes, and only then transfer to the dish. Remove the skewers. You can serve potatoes or rice as a side dish for the poultry.

Pork roll with dried apricots

Ingredients:

  • 400 g pork tenderloin;
  • 200 g dried apricots;
  • 2 tbsp vegetable oil;
  • 1 tbsp gelatin;
  • Salt, pepper, spices - to taste.

Cooking method:

  1. Peel the pork tenderloin and cut it in half lengthwise, without cutting to the end. Beat off with a kitchen hammer.
  2. Season with salt and pepper. Sprinkle with spices for meat or kebabs. Then sprinkle with powdered gelatin. It is needed to "tie" the meat. This will prevent it from decaying when sliced.
  3. Top with a strip of pre-soaked dried apricots. Roll the meat into a roll using cling film.
  4. Grease with vegetable oil and wrap in foil.
  5. Place in an oven preheated to 180 ° C for 25 minutes.
  6. Then cut and decorate like a holiday meal.

Baked salmon with mustard and honey

Ingredients:

  • 680-900 g salmon fillet;
  • 1 1/2 tablespoons honey
  • 1/2 tablespoon Dijon mustard
  • 3 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • A pinch of salt.

Cooking method:

  1. Preheat oven to 205 ºC.
  2. In a small bowl, combine honey, mustard, garlic, 2 tablespoons of olive oil, lemon juice, dill and salt.
  3. Line a baking sheet with foil. Brush the salmon fillets on both sides with olive oil. Place the fillets skin side down (if the fillets have skin) on the foil. Brush the honey mustard mixture on the fish with a cooking brush.
  4. Place in oven and bake at 205 ºC for 8-10 minutes, or until cooked (do not overcook salmon!). It is normal for the fish to remain slightly moist in the center. When you take it out of the oven, the residual heat will cook the fillet to the end.
