So! Your attention is the Portuguese potato with olive oil and rosemary. It sounds somehow pretentious, but everything is much simpler. It is very tasty and one serving is usually not enough. This dish is prepared in restaurants in Portugal. You can eat it with fish, meat, poultry. And in Portugal itself, potatoes are often served with octopus or cuttlefish. Although it is quite possible to eat this potato anyway.

Recipe

You will need

  • potatoes - 8 pieces;
  • garlic - 4 cloves;
  • butter - 30 grams;
  • olive oil - 40 milliliters;
  • rosemary - 2 teaspoons;
  • sea salt - 2 teaspoons.

How to cook

I must say right away that you can, of course, add any of your favorite spices to taste, and use ordinary table salt instead of sea salt.

So, we take 8 potatoes and rinse them thoroughly under running water. Place the potatoes in a saucepan, cover with water, put on fire and boil until tender. Next, you need to get the potatoes, put them on a plate, and wait until they cool completely.

Now take a spoon, no matter a tablespoon or a teaspoon, and press it on top of each potato. The potatoes should not fall apart, but only crack!

Prepare a baking sheet or baking dish. Pour olive oil into it. Peel the garlic and cut into thin slices. These plates need to be spread in oil around the entire perimeter.

Now it's the turn of the potatoes. Put it in a baking dish with the cracked side up. Potato tubers should be folded as tightly as possible to each other. Sprinkle the potatoes with rosemary and salt on top.

Cut the butter into cubes and put 1-2 pieces in each potato crack. If you like, you can also add some olive oil on top.

Preheat the oven to 200 degrees, then send the form with potatoes to bake. Quite a little time is enough for the potatoes to brown a little, and that's it, you can get it out. During this time, the potatoes are saturated with incredible tastes and aromas!

In the original Portuguese potato recipe, it is the young potatoes that are specified. And this is not in vain, because it is young potatoes that are insanely tender, they can be eaten with their peels, they are nutritious and healthy. But it is quite possible to use such a potato that is at hand, especially since now it is difficult to find a young one.

Of course, in order for all the potatoes to cook evenly, and then brown evenly, you need to choose approximately the same tubers.

Serving potatoes in Portuguese, as I wrote above, can be with any meat or fish. Or you can serve it with fried mushrooms or fresh vegetables.
