There were no special delights, the ingredients were used in the preparation of the most ordinary ones, but it turned out insanely delicious! Sausages with green peas
Easier, perhaps, you can only put sausage on bread. The combination is ingenious - you boil the sausages, put them on a plate, and sprinkle canned peas nearby. Very tasty!
Marinated fish
Thursday was a fish day in all canteens. I tell you how they cooked fish under the marinade then. Cut 3 carrots into strips, chop 2 onions, fry the vegetables over low heat. Add a glass of tomato puree, cloves, lavrushka, and pepper to taste. Simmer for 20 minutes, then add 1.5 tbsp. water and 0.5 tbsp. 3% vinegar. Boil the marinade, add a pinch of salt and sugar. Fry the pollock pieces, then pour over the chilled marinade, and let it brew.
Dumplings with vinegar
Nowadays, dumplings are eaten with ketchup, mayonnaise, sour cream, and in Soviet times in the canteen you could buy them with vinegar. Even now I can wrap a plate of such yummy. The main thing is to dilute the vinegar to about 3%.
Milk soup
Now this dish is still fed in state kindergartens. In childhood, dairy vermicelli seemed to many to be tasteless, but someone loved this dish very much! I can even share the recipe. In a liter of boiling milk, put 1 tsp. l. sugar and 1 tbsp. l. butter. And then add 50 g of vermicelli. Boil the vermicelli until cooked, and you're done!
Goulash with gravy
Now we also cook this at home, because it is very tasty. A pound of any meat will require a liter of water and 50 g of tomato paste. First, the meat is fried in pieces, then the pasta is added, and then water. You need to simmer the dish under a closed lid over low heat for about 40 minutes, then you need to salt and cook for another 20 minutes. Separately, 150 g of chopped onion and 20 g of flour are fried, and then the sauce must be carefully poured onto the onion, stirring constantly. After that, all this "brew" is returned back to the meat, a pinch of sugar and lavrushka are added, brought to a boil and you're done!
Naval pasta
Another simple but ingenious dish! Boil the macaroons. Cook a piece of beef and pass it through a meat grinder. Add fried onions, salt and pepper to the minced meat. Stir the minced meat with the pasta and you are ready to eat!
"Vitamin" salad
No, this is not a vinaigrette, but it is also a very popular salad from Soviet canteens. Chop ½ kg of cabbage, add 4 tbsp. l. vinegar and salt. Heat everything over a fire for three minutes, then cool. Add grated carrots and some sugar.
Red sauce
A very popular sauce in those days. Fry 50 g flour without oil, add 1 tbsp. warm water, fry separately chopped onions and carrots. Add 100 g of tomato paste to the vegetables, stir and simmer. Boil 1 liter of broth, and add it, stirring constantly, to the flour and water. Also add the sautéed vegetables and simmer for an hour. And to taste exactly like from a dining room, add margarine or butter to the sauce.
Dried fruits compote
A very easy to prepare drink, incredibly tasty and healthy! Put dried pears and apples in a saucepan, add ½ tbsp. sugar and a liter of water. Bring to a boil and simmer for half an hour over low heat. After that, you need to add a glass of any other dried fruits, and cook the compote for another 5 minutes.
Cutlets "for 11 kopecks"
Such cutlets can be considered a hit in Soviet canteens. Their whole secret is in the presence of black bread. Minced meat and bread were taken in equal proportions, a couple of onions, salt and 1 egg were added. And that was all, it only remained to form the cutlets, roll them in breadcrumbs, and bake in the oven at 200 degrees for half an hour.
