Five years ago, my colleague went to Italy for a vacation. From there she returned refreshed, tanned, with a lot of impressions and a thick notebook of original Italian recipes. Walk, walk like that, she said upon arrival and pestered all local chefs and just housewives with the goal of finding out an old recipe that is incredibly popular or is inherited within the family.
She was most delighted with simple eggplants. She shared this recipe with me. After that, I don't cook the eggplants in any other way! This is a mind-blowing dish. The blue ones turn out to be fragrant, tasty, and everyone asks for more!
If you work (at home or go to the office, factory, etc.), then when you come home you don't really want to stand for long hours in front of the stove. This recipe will be your salvation. In 20 minutes, you can prepare a dinner that even the most capricious family members will eat. The recipe is very simple but good. The first thing to do is to cut the onions into cubes. Then you need to do the same with sweet pepper. Place the slices in a serving dish. The dish does not need to be taken large. It will be free in a minute.
Now three medium eggplants need to be peeled. No rind is used in this recipe. Meanwhile, you need to fry the onion and pepper. Pour refined sunflower oil into a frying pan. But this is not so important, if you are used to cooking with olive or corn, then please continue. This will slightly affect the taste. I am talking about sunflower oil only because it is the most popular and is usually found in every family.
Now take the medium sized tomatoes and peel them off. Do you know how best to take it off? If not, then remember: you need to scald the tomatoes with boiling water from the kettle. No, they won't cook. And the skin will come off very easily.
The eggplants we peeled are cut into cubes. Now put them in a company with onions and bell peppers. you need to simmer under the lid and only 7 minutes. Do not overexpose them. Stir the mixture occasionally, or it may burn.
While the vegetables are stewing, cut the tomatoes into the same cubes and cook the garlic. It needs to be taken to taste.
The eggplants are almost ready, they need another minute and that's it? So we add tomatoes and garlic to the pan. Cover with a lid again.
After everything has become well stewed, sprinkle the dish with spices.
And now a small but very important nuance: be sure to add fresh basil and Mascarpone cheese to the stewed vegetables. But, if this is not there and there is nowhere to get it, then this step can be skipped (I did this a couple of times). The taste will be less creamy and spicy, but still very tasty!
But if you have (any) piece of cheese in the fridge, be sure to grate it and sprinkle the hot dish on top. You can take any cheese for this, except processed and "sausage". I used both expensive Parmesan and the simplest Russian. Delicious with both.
You need a minimum of ingredients, very little culinary skills, and your family will ask for such a dinner very often. Note that it doesn't take very long either. If you do not rush, then within half an hour you can make a delicious and healthy dinner or lunch.
This recipe is perfect for busy housewives. There is not always a lot of time and a huge selection of products in the refrigerator, and everyone can afford this quite budget dish.
