Vegetable soup on cabbage broth with beans and mushrooms

Lent is, therefore, in my kitchen going on anarchy: the husband requires meat (he is a man, he needs power, so the meat, I do not deny it), I try to eat meatless meals. But by coincidence, one way or another, I have to deviate from the intended path - it often requires removal of food samples.

But today I hold and cook though lean, but very hearty soup!

Cooking Time - 30 minutes

Servings - 3

Ingredients

sprouts - 100g;

beet - 100 g;

Carrots - 1 pc;

Onion - 1 pc;

potatoes - 200 g;

mushrooms - 50 grams;

Beans - 3 tbsp .;

Tomato paste - 1.5 Nl .;

Vegetable oil - for frying;

lemon juice - 1 tbsp .;

sugar - 1 tsp .;

dill - to taste;

salt - to taste;

garlic - on request.

Cooking method

I took as a basis the broth that was left after boiling cabbage for meatballs. Regarding the amount of broth - the amount depends on the density of soup that you prefer. We love the soups thicker so ponavaristey.

1. First sliced ​​potatoes. I cut into cubes and just lay in the pan with the broth.

2. Shinkuem cabbage: cubes, strips - cut as love. Also, once we lay in a saucepan.

3. Getting onions - shinkuem.

4. Fry in oil until golden brown. Directly into the pan.

5. Cut the middle-sized diced carrots.

6. Also fry carrots. It can be on the same oil, which has recently been browned onions.

7. Beets cut into cubes. In my opinion, because it is less fade.

8. Put the beets in oil. Fry a few minutes prior to the acquisition of light softness. Add the lemon juice to preserve the color and mild acidity. Sugar is added to balance the flavor. Another couple of minutes and beets also send in a saucepan.

9. Mushrooms chopped.

10. And as the other components of fry in an oil.

11. Lay the mushrooms in the pan.

12. Should be sent to the beans.

13. The last ingredient, which will go into the soup - tomato paste. This is explained simply - it is believed that the enzyme contained in tomatoes, slows down the process of cooking food.

14. Cook soup for another 10 minutes, then add the chopped garlic and herbs. Turning off the heat, cover with a lid.
