Today cook cutlets... And it is not simple, and fish. And for my taste the most delicious meatballs obtained pike. They are flavorful, tender and juicy even when properly prepared.

  • pike fillets - 400 g;
  • potatoes - 50 g;
  • onion - 100g;
  • breadcrumbs - 100g;
  • milk - 100 ml;
  • breadcrumbs - 6 tablespoons. l .;
  • oil - for frying;
  • broth or water - about 150-200 ml;
  • salt - to taste.

Cooking method

Getting to cook cutlets of river fish, you have to tune in to quite a tedious process: like it or not, and it is called the bony not for slender hips.

Pike first well washed, removing from the surface of all mucus. Do it comfortably with salt and warm water. Sprinkle with salt and rub the hands a fish. Then wash off the salt, together with mucus.

After completing manipulation, clean the fish on the scales. Then cut the belly, trying not to damage the gallbladder, and extract the eggs / milk, liver. The rest of us will not be required. Washed well with fish. We make a cut on the back and carefully remove the fillets from the bones. Then, using a knife (blunt part of) separate the fillets from the skin.

1. Breadcrumbs soaked in milk.

2. While the bread is soaked, scrolls 3-4 times through a meat grinder fish fillets and onions.

3. In almost ready add the minced fish squeezed of excess milk breadcrumbs.

4. On a fine grater rub the potatoes. I used fresh. Therefore, in the future it will be a small detail that will bring the potatoes to 100% completion.

5. Of minced meat forming patties. They rolled in breadcrumbs.

6. To a warm vegetable oil spread fishcakes pike. And now the caveat relating to potatoes. When the patties are browned on each side for 5-7 minutes, pour into water or broth pan (covering 1/2 of the height patties). We put the fire to the minimum and tormented chops 20 minutes. So they go to availability and at the same time become more tender and juicy.
