1. Boil strong coffee (espresso) and leave to cool. Cheese mash in a wide bowl with a fork.

2. Eggs are divided into whites and yolks. Rub the yolks with the sugar until white. Gradually pour them into the mascarpone, stirring whisk or electric mixer.
