It's hard to imagine the New Year without an Olivier basin. It's good if a big company gets together and eats it. But what if New Year's food remains? How much it can be stored, the expert answers

According to the good old Ukrainian tradition, the New Year's feast is dominated by mayonnaise dishes. Not only is mayonnaise very high in calories, but it is also a favorable breeding ground for pathogenic bacteria, thanks to which you can spend the afternoons hugging the toilet.

Microbiologist Oksana Volskaya noted that the dishes that are included in the standard New Year's menu, in general, cannot be called favorable for digestion. This is a tough meal that takes a really long time to digest.
The food cult for the New Year is not an obligatory program. You can give preference to light snacks and fruits.

The expert talked about how much you can store New Year's dishes.

Olivier salad 

It is advisable to mix the Olivier salad and make it before serving, because after refueling it can be stored for a maximum of 4 hours outside the walls of the refrigerator.

Ideally, the hostess should make enough salad for the family to eat in one meal, rather than for several days.

Without dressing, the salad can be stored for up to 40 hours, but without cucumbers and onions.

Shelf life of New Year's snacks and salads:

  • Olivier dressed - 4 hours;
  • Fur coat salad - 24 hours,
  • Crab stick salad - 24 hours after dressing,
  • Stuffed eggs - 2-3 days if the eggs are hard-boiled (at least 15 minutes) and disassembled with clean hands.

Another traditional dish is jellied meat.

The expert notes that in public catering, for example, it is stored for only 24 hours. But if you cook the dish at home, you can leave it for 3-4 days.
