Many people get this itch when they want to do strange things to themselves. Some drink urine, and some can dry vegetables. This is such a need to do something non-standard with yourself with your own hands.
Usually such things are done by people who have already canned something, and everything was fine. Then they modify the proven recipe and do not add brine to the vegetables before preserving. They simply put raw vegetables in jars and then sterilize them dry. Rather, it only seems to them that they are being sterilized. In fact, it turns out a lottery.
In fact, it is the water around the vegetables in the jar that allows the heat to properly permeate the vegetables.
Damp heat
Remember the stories about dry and wet heat? The sauna is warm and dry. There may be temperatures as low as 110 degrees. In the Russian bath, warmth is important. In it, I gave up the park a little, and you can already overheat. This is because damp heat heats up faster.
Bacteria and their spores are more sensitive to damp heat. If you managed to avoid eating canned food in brine, this does not mean that it will be exactly the same without brine.
Everybody does it and nobody died
The germs that cause botulism and other infections are not evenly distributed around us. Sometimes our tricks get away with it. Sometimes we poison ourselves. This is unpredictable. If you break the rules, sooner or later you will run into a dangerous infection.
But what about ghee?
No. Ghee is not a substitute for water when preserved.
