Charlotte is a sweet dessert made from apples baked in dough. Dessert, then, is prepared quickly. However, there are some nuances that will help you in cooking. I share my secrets and a quick recipe!

Secrets of making charlotte

1.The eggs should be warm. They need to be removed from the refrigerator in a few hours. This will make them whisk much better, and the protein will be fluffier.

2. The whites and yolks must be separated. Yes, it takes a little longer, but the result is much better. Separate the yolks and whites. And also separately beat the yolks with a part of sugar until a thick dense foam, and whites with a part of sugar until dense peaks. I whisk, if you like, you can of course use a mixer.

3. Flour needs to be sieved. The dough prepared with sifted flour is airy and tender. Sift and stir with the egg mass.

4. No soda needed. We add it to keep the baked goods high and airy. However, this recipe doesn't need baking powder or baking soda and vinegar. Charlotte is a delicate biscuit, so the dough will turn out to be very airy, and it does not need any additives or foreign tastes.

5. The oven must be preheated. The dough must be placed in an oven preheated to the required temperature. Neither cold nor warm, namely hot. And also, do not open the oven door during cooking, otherwise the dough will settle. The readiness of the charlotte should be checked after half an hour using a wooden stick or a match. If the stick is dry, the dessert is ready.

6. Use vanilla and cinnamon. It is these two flavors that go well with apples. You can take one thing, or two components at once.

You will need:

  • apples - 0.6 kg;
  • sugar - 200 g;
  • sifted flour - 200 g;
  • vanilla and cinnamon to taste;
  • salt - a pinch.

Preparation:

Separate the whites from the yolks. Whisk the whites and half the yolks with half the sugar. Combine both egg masses, add vanilla and cinnamon and mix everything. Then gradually add the sifted flour. If before that you used a whisk or mixer, then you need to stir the dough with a spatula, from the bottom up, so that the airiness does not disappear. The consistency of the dough should be similar to liquid sour cream.

Wash the apples, cut them into halves and remove the cores. Cut the fruit into wedges. Turn on the oven while it is warming up to 180 degrees, grease the mold with vegetable oil, and lay the apple slices in a thick layer on it.

Next, pour out the dough and smooth out gently. Place the dish in the oven and cook for 25-40 minutes. Cooking times will vary for each oven, but I recommend testing the charlotte with a stick after half an hour. Most likely, it will already be baked!
